The Essentials:
  • β€’ 2 lbs fresh peaches & 1 lb ripe tomatoes
  • β€’ 1 1/2 cups light brown sugar
  • β€’ 1 cup apple cider vinegar
  • β€’ 1 onion, minced & 1 tbsp grated ginger

01. The Melt: In a non-reactive pot, dissolve the brown sugar in the vinegar over medium heat until a light syrup forms.

02. The Simmer: Add fruit, onions, and spices. Bring to a boil, then immediately reduce to a low simmer.

03. The Glaze: Cook uncovered for 50 minutes. Stir occasionally until the mixture is thick, glossy, and jam-like. Cool completely before jarring.


The Spicy Ginger Remix
