The Essentials:
  • β€’ 1 lb veal scallopini, pounded very thin
  • β€’ 8 oz cremini mushrooms, sliced
  • β€’ 1/4 cup dry Marsala or white wine
  • β€’ 1/2 cup heavy cream & fresh parsley

01. The Sear: Dredge veal in seasoned flour. Sear for 2 minutes per side in hot butter and oil. Remove and keep warm.

02. The Reduction: SautΓ© mushrooms until brown. Deglaze with wine. Pour in cream and simmer until the sauce is thick enough to coat a spoon.

03. The Finish: Return veal to the pan to glaze. Serve with a shower of fresh parsley.
