The Veal Sinatra
"A tribute to the old-school Italian kitchen. Inspired by Locanda Rustica, this dish relies on the speed of the sear and the depth of the cream reduction."

The Essentials:
- β’ 1 lb veal scallopini, pounded very thin
- β’ 8 oz cremini mushrooms, sliced
- β’ 1/4 cup dry Marsala or white wine
- β’ 1/2 cup heavy cream & fresh parsley
01. The Sear: Dredge veal in seasoned flour. Sear for 2 minutes per side in hot butter and oil. Remove and keep warm.
02. The Reduction: SautΓ© mushrooms until brown. Deglaze with wine. Pour in cream and simmer until the sauce is thick enough to coat a spoon.
03. The Finish: Return veal to the pan to glaze. Serve with a shower of fresh parsley.
